Summer is one of my favorite seasons for making fun snacks with the kids! I’m always looking for easy summer snacks for kids that are fun, simple to make, and perfect for beach days, pool days, and summer playdates. I love finding snacks that feel a little special and fun for summer, but are still simple enough to make without spending hours in the kitchen.
I’m going to continue adding more of our favorite summer snack recipes to this post, but I wanted to start by sharing one of our recent favorites! These Jello Cups are super cute, easy to make, and always a huge hit with kids!

Ingredients
- 1 3 oz package of berry blue Jell-O mix
- 1 tub 8 oz. Cool Whip Whipped Topping, thawed
- 2 containers of 6 oz vanilla yogurt
- 1/4 cup boiling water
- Individual serving cups (we used these)
- Toppings: 1/2 cup Graham cracker crumbs, Gummy sharks, Teddy Grahams, Life Saver Gummies, and umbrella toothpicks
Instructions
- Dissolve Jell-O into boiling water in a medium bowl
- Whisk in Cool Whip and yogurt and stir until blended
- Spoon into individual serving cups and add a spoonfull of graham cracker crumbs on one side
- Freeze for three hours (or until firm!)
- Remove from freezer 15 minutes before serving. Top with gummy sharks OR Teddy Grahams with a Life Saver Gummy around the middle.
- Add an umbrella toothpick and serve!
I don’t have pictures of some of these other ones just yet, but I wanted to quickly share a few others we’ve been making!
- Apple Sandwiches – Slice an apple and use them like bread to sandwich any nut butter (we like peanut butter) and chocolate chips
- Banana Roll-Ups – Grab a tortilla, spread any nut butter on it (again, we like peanut butter!), place a banana on top, roll it up and then slice it. It looks like little banana sushi!
- Veggie Cups – Take a little cup (a reusable cupcake liner is fun), add hummus and top with veggies like carrots, celery, and cucumber sticks. For some reason, having veggies in a fun cup makes them eat it all!
- Frozen Berry Yogurt Bites – Mix up your favorite yogurt with a little bit of honey and mashed up berries (you can also add protein powder). Line a baking sheet with parchment paper and use a spoon to place a spoonful on the baking sheet. Then freeze! They thaw quickly, but kids always enjoy them as a frozen treat.
